This recipe came from my son in culinary school. He said they call it cafeteria breakfast pizza, lol. He woke up early and made this for my husband and I this past weekend. It’s such a simple recipe but it’s so good that I just had to have seconds.

Now my son is a chef not necessarily a blogger or writer, so it was really hard for me to get him to tell me all of his measurements because he cooks like my grandma does, a dash of this a pinch of this lol. But i think we got it …. after some patience lol.

  • Add milk to thicken (my son says to eyeball it)

This biscuits and gravy casserole is straight up comfort food and one the whole family can enjoy.

Ingredients

  • For Biscuits:
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons baking powder
  • 1 cup and 2 tablespoons of buttermilk
  • 1/2 cup unsalted butter (1 stick)
  • 2 teaspoons of honey
  • For Sausage Gravy:
  • 1 lb. sausage
  • 2 tablespoons of flour
  • 1 tablespoon of butter
  • Mozzarella cheese
  • Add milk to thicken (my son says to eyeball it)
  • Salt and pepper to taste.

Instructions

  1. Preheat oven to 425.
  2. Put butter in freezer for 15 minutes or until cold.
  3. Cook sausage till done. (Keep the grease)
  4. Add honey into buttermilk and mix well.
  5. Gather and mix dry ingredients for biscuit.
  6. Grate cold butter and mix in to dry ingredients.
  7. Create a well in the middle of your dry ingredients.
  8. Add flour to hands. Pour buttermilk mix into the well slowly while mixing with your hands. The dough is going to be very sticky at first. Just keep going. Add more flour to hands as needed.
  9. Flour your surface and roll out your dough into a rectangle. About 1/4 inch.
  10. Fold into center on one side. Then continue to fold the opposite side over that.
  11. Rotate dough 90 degrees and roll back out into a rectangle.
  12. Repeat this step 2 more times. (try not to over mix )
  13. Flour or grease your 9x13 pan. (we used flour)
  14. Press dough into pan. You may have extra depending on your desired thickness. (chef snack, lol)
  15. Press around edges like a pizza crust.
  16. Brush with buttermilk on top and poke a few holes in the middle of dough with a fork.
  17. Bake until slightly golden.

For Gravy:

1. Reheat sausage pan on medium.
2. Melt 1 tablespoon of butter in with it.
3. Mix in 2 tablespoons of flour and cook out the raw flour taste.
4. Slowly whisk in milk to your desired thickness of gravy. (everyone is different)
5. Add salt and pepper to taste.

FINISH:

1. Pour gravy mixture on top of dough and sprinkle with cheese.
2. Bake for about 10-15 minutes or until cheese is golden brown.
3. Let it set for about 5 mins so that the gravy inside sets before serving.

Tip: If biscuit edges are getting too brown, you can add tinfoil to the edges while you finish off the melting of the cheese.

Notes

Don't have buttermilk? Add 1 tablespoon vinegar to a 1 cup measurer, then fill with milk. Stir and let sit for 5 mins. Cream of Tartar or lemon juice can be used in the same method if you don't have vinegar.
